Mark is convinced the perfect pint is best paired with live music and a great friends. A third-generation Chicago native, Mark and his wife Amanda moved to Denver, Colorado in 2009 where he had a day job in operations management, perfecting the art of customer service and moonlighted as a homebrewer. He became obsessed with perfecting unique and delicious beer recipes in his nerdy, custom built mini-brewery.
During his eight years in Denver, Mark’s passion for home brewing grew and after advancing to the final rounds of the 2013 and 2015 National Homebrew Competition, Mark and Amanda agreed it was time to see the dream of On Tour Brewing become a reality. Together, they packed up their belongings and drove from Denver to Chicago to build his vision of a place where people can take a break and press pause over a cold, flavorful pint.
When Mark isn’t obsessing over every detail of developing the On Tour experience he loves to spend time with Amanda and their son Ryder, travel to new places, see live music, play golf and disc golf, ski, hike, camp. Naturally, he incorporates sampling new beers into every activity along the way.
Mark Poffenberger comes to On Tour Brewing after seven years of professional brewing experience in both a production and pub setting. Mark grew up in Rochester, IL, and began his professional brewing career as the first employee hired at Sun King Brewing in Indianapolis.
Throughout his tenure there he quickly progressed to become Production Manager and Lead Cellarman while the brewery grew from a start-up to 18,000+bbl/year. In addition to those roles, Mark excelled in creative experimentation by developing the Barrel Aging and Wild/Sour Program – winning multiple Great American Beer Festival (GABF), World Beer Cup and Festival of Wood and Barrel Aged Beers (FoBAB) medals in Barrel Aged Categories.
In July 2014, Mark wanted to re-focus on brewing and recipe development and accepted a Brewer position with the multi-award winning Fat Heads Brewing. Mark (and his wife Courtney) moved across the country to open Fat Head’s 2nd pub location in Portland, OR (one of the most highly competitive areas in the nation and known for its good beer). After a GABF medal and Fat Head’s IPA’s being ranked #1 and #2 IPA’s in Portland by blind judging, Fat Heads quickly rose as a destination brewery respected among its Portland peers. As Head Brewer of On Tour Brewing, Mark is excited for the opportunity for he and his wife to return to the state where he grew up (and his Midwest roots!) and to be a part of the Chicago brewing scene he knows and loves.
